Are Those Eggs Fresh?

Years ago, I had a friend who was new to "country life" and she got some laying hens.  She had so many eggs so didn't know what to do with them all.
 
She gave them to friends and family and then...started throwing them away because she thought she had too many to use!
 
 
Never, ever throw good eggs away!
If you have eggs that you don't think you'll use before they go bad, do this:
Crack an egg into each "cube" of a plastic ice cube tray. Put it in the freezer and once frozen, pop them out and place them in a ziplock bag. 
 
 
Keep them frozen until you're ready to use them. You can easily take out as many as needed and put the bag back in the freezer.
 
 
Need to "test" your eggs? Put one in a glass of water. If it sinks, it's good. If it floats, it's getting older and you may want to toss it.
 
 
When eggs begin to age, the air pocket inside will increase in size. The more air in the egg, the more it will float.
