Kitcheneez Mexican Meatloaf

Ingredients
- 1 ½ pounds lean ground beef
- 1 small onion, chopped
- 1 cup crushed tortilla chips
- ¾ cup shredded pepper Jack cheese

1 packet of Kitcheneez Taco Seasoning mix
- 2 large eggs, beaten
- ½ cup milk
- ¼ cup mild red taco sauce, or more to taste
Directions
Preheat the oven to 350*
In a large bowl, mix together beef, onion, tortilla chips, pepper Jack cheese, and taco seasoning until combined.
In a smaller bowl, whisk together eggs, milk, and taco sauce.
Add the sauce mixture to the meat and stir until well combined.
Press the meat into a 9x5 greased loaf pan. Pour the sauce on top.
Bake for 45-60 minutes or until the meat tests done with a meat thermometer (at least 160*).
Serve as it is or add your favorite taco toppings. Enjoy!
