A refreshing appetizer to excite your guests and their tastebuds!
Ingredients
-
2 large cucumbers, seedless are best
-
Kitcheneez Garlic Herb Dip mix
-
8 oz. cream cheese, softened
-
sun-dried tomatoes or cherry tomatoes
-
fresh herbs of your choice, optional
Directions
Thoroughly rinse and dry each cucumber. Cut off the tips of both ends.
Using a vegetable peeler, alternate shaving strips down the entire length of the cucumber while leaving strips of the cucumber peel intact. This will give the striped appearance. You can completely peel the cucumbers, if desired.
Cut the cucumber into approximately 1 1/2-inch slices.
In a small bowl, combine the cream cheese with 1-2 tablespoons of Kitcheneez Garlic Herb dip mix. Use as much as you like for the flavor you’re looking for. Our Summer Dill dip is also delicious in this recipe.
Spoon the cream cheese mixture into each cucumber slice and top with a sun-dried tomato or cherry tomato half. Garnish with a sprig of fresh herbs of your choice.
Refrigerate until ready to serve.
