Kitcheneez Sweet Potato Casserole

Start with the basic delicious casserole and top it with your choice of yummy toppings!

Ingredients
4 medium sweet potatoes, cooked, mashed and peeled
¾ cup sugar
6 tablespoons butter
2 eggs, beaten
1 teaspoon vanilla
⅓ cup milk

½ teaspoon Kitcheneez Pumpkin Pie Spice
1/2 cup brown sugar, 1/4 cup flour, 2 tablespoons butter
1/2 cup butter, 1 cup dark brown sugar, 1/2 cup flour, 1/2 cup chopped pecans, 1 cup coconut
2 cups Grape Nuts cereal, ⅓ cup chopped pecans, ¼ cup butter
½ cup brown sugar, ¼ cup flour, 2 tablespoons butter, 1 cup chopped pecans
¾ cup crushed corn flake cereal, ½ cup brown sugar, ½ cup chopped pecans, ½ cup butter

Directions
To cook the sweet potatoes: pierce each with a fork several times. Cook in the microwave for about 4 minutes or until the potatoes are tender. Allow to cool completely before handling.
Peel and mash the cooked sweet potatoes. Place them into a large bowl with the remaining ingredients. Mix well.
Pour into a greased 2 quart baking dish.
Pick your topping. Mix the topping and crumble over the sweet potato mixture.
Bake at 350* for 45 minutes or until the center is slightly firm.
