Here's some neat facts about them:
*North Carolina ranks as the No. 1 sweet potato producing state, growing more than 50% of all sweet potatoes in the country.
*More than 200 billion individual sweet potatoes are grown in NC each year... now that's a lot of sweet potatoes!
*Sweet potatoes should never be refrigerated unless they are cooked. Storing them in the refrigerator can make them bitter.
*While the most common sweet potatoes are orangish in color, they can be red, pink, yellow, white or even purple.
*The leaves of the plant are also edible and taste like spinach.
