When we have lots of lettuce coming in from the garden, this is a favorite way to enjoy it!
For Mother's Day, I picked, packed and took 10 bags of lettuce to my Mom so she could call her neighbors to have them come over and visit to pick up some lettuce. She's not able to get out and about, so she enjoyed having a reason for people to come see her.
Ingredients

4-6 slices of bacon

⅓ cup sugar

½ teaspoon salt
-
¼ cup cider vinegar
-
¼ cup water

1 head of lettuce or about ½ pound of loose leaf lettuce, torn or cut into small pieces

½ onion, sliced

1 egg beaten, optional
Directions
Place the lettuce in a bowl and set aside.
In a skillet, fry the bacon until crisp. Remove the bacon and set it aside.
Add the sugar, salt, vinegar and water to the skillet. Bring to a boil and add the egg (if using) and onion.
Stir constantly until the onion is tender. Pour over the lettuce. Toss to coat. Sprinkle bacon on top.
Recipe Note
This dish is delicious with or without the egg, so feel free to leave it out if you don't want to add it.
This dish doesn't keep well so make a half a batch if you don't think it will be eaten in one sitting.
