Mexican Street Corn Soup

Ingredients

  • 4 tablespoons butter
  • 1 small white onion chopped
  • 1 jalapeno minced
  • 2 teaspoons minced garlic

  • 3 tablespoons all-purpose flour
  • 1-2 tablespoons Kitcheneez Mexican Street Corn Seasoning

  • 4 cups chicken stock
  • 6 cups frozen corn kernels about 30 ounces
  • 1 1/2 cups heavy cream half and half or milk

  • 1/2 pounds bacon cooked and crumbled
  • 1/2 cup crumbled cotija cheese
  • 1 jalapeno sliced
  • chopped avocado

Directions

  1. Melt the butter in a large saucepan over medium heat.

  2. Add in the onions and minced jalapeno. Sauté for about 5 minutes, then stir in garlic and cook an additional minute. Be sure not to overcook the garlic.

  3. Stir in the flour and seasoning. Cook 1-2 minutes.

  4. Stir in the chicken stock until smooth and bring to a boil. Add in the corn and return to a boil.

  5. Reduce the heat to low and simmer 10 minutes.

  6. Stir in cream. Serve with desired toppings.
