We LOVE pickles! And we love when the cucumbers start to come in from the garden.
This recipe does not take canning skills or processing so they go together quickly and easily.
We save jars throughout the year to be able to share pickles with friends and family so we'll be prepared when the harvest time begins.
These will stay good for 4-6 weeks if kept refrigerated properly.
You know I have to add some cucumber facts...
Scientifically, cucumbers are a fruit because they grow from the flower of the plant and hold the seeds.
Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.
Feeling tired in the afternoon, put down the caffeinated soda and pick up a cucumber. Cucumbers are a good source of B vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours.
Tired of your bathroom mirror fogging up after a shower? Try rubbing a cucumber slice along the mirror, it will eliminate the fog and provide a soothing, spa-like fragrance.
Are grubs and slugs ruining your planting beds? Place a few slices in a small pie tin and your garden will be free of pests all season long. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area.

So good and so easy!
No canning skills or processing needed.
These are more like bread and butter pickles than dill. They are AMAZING on burgers as a topping, on hot dogs as a relish or as a side dish to any meal!
One package of our Refrigerator Pickle mix makes 3 batches of pickles.

Ingredients
- 6 cups thinly sliced cucumbers
- 2 cups thinly sliced onions
- 1-1/2 cups sugar
- 1-1/2 cups cider vinegar

1 tablespoon of Kitcheneez Refrigerator Pickles seasoning mix
Directions
- 1) Place the cucumbers and onions into a large bowl.
- 2) In a pot, combine the sugar vinegar and seasoning.
- 3) Bring to a boil.
- 4) Cook and stir until the sugar is dissolved.
- 5) Allow to cool then pour over the cucumber mixture.
- 6) Cover and refrigerate for at least 24 hours before serving.
