Greens served as a part of the New Year meal are meant to resemble money, specifically "folding" paper money.
Tradition says that by serving dishes using cabbage, sauerkraut, collard greens, kale, chard, mustard greens or turnip greens ensure good fortune for the coming year.

Ingredients

1 lb. fresh collard greens, washed well

3 slices bacon
-
½ to 1 onion, chopped

½ teaspoon minced garlic, optional

3 cups water
Directions
Cut the tough stems, if neccessary, from the collards.
Chop the greens into 2 inch pieces.
In a large pot, cook the bacon and onion until the onion is tender. Add the garlic, if desired.
Place the greens in the pot and cook until wilted.
Add the water. Reduce heat to low, cover and simmer until greens are tender (30 to 45 minutes depending on the tenderness of your greens).
Season with salt, pepper and/or red pepper flakes, if desired.
